I have been eating a vegan diet for almost a month now, and although my cravings are much less than they were, I still find myself daydreaming about dessert foods. Cookies have always been a favorite of mine, from peanut butter cookie to shortbread.
Eating a vegan diet doesn’t mean you are free from craving sweets and processed foods. The trick is to not fall back on bad habits, and also to honor your cravings by finding and modifying healthy recipes to suit your time and tastes. Fortunately, there is an easy way to get your cookie fix without spending much time, and without resorting to eating a sleeve of Oreos. I searched high and low for a simple, bare bones vegan chocolate chip cookie recipe, and found this recipe from Making Thyme For Health. I didn’t have oat flour, nor did I care too much about getting the traditional cookie appearance, so I modified it a little bit. Disclaimer: I will warn you now, that this is a dangerous thing to make when you don’t have guests. I ended up eating the entire batch over the course of a weekend, and I’d do it again. Heck, I probably will do it again!
