Spring is finally showing itself in most parts of Minnesota, after what feels like the longest, most annoying winter in history. It probably feels that way because it was my first year living at an apartment complex with no garage, and I didn’t have my super caring, awesome dad there to secretly clean off my car before work. Oh, I also got to experience losing control of my car and spinning it twice before getting stuck in a snowbank. So, yeah, spring is even more welcome than usual for me. Coming into spring, it is still quite chilly and cozy, so naturally I’ve been craving comfort foods.
More specifically, potatoes! In an effort to take better care of myself (and my poor wallet – fast food is ‘cheap’, but relative to home cooking it is quite expensive), fast food fries or really any deep fried potato products are not on the menu. Luckily, when the craving struck, I had a bag of yellow potatoes and an hour to spare. Here is my recipe, if you can even call it that, for Crispy Oven Potatoes.
