Sometimes it is easy, when making a change, to get discouraged or hung up on the way that lifestyle or diet is portrayed on YouTube or blogs written by more affluent folks. A couple of years ago, I’d have been shocked to think that eating a vegan diet is not any more expensive than an omnivorous one. A quick peek into more popular vegan YouTubers’ ‘What I Eat In A Day’ videos and it is clear that there is an abundance of dehydrated goji berries, expensive pre-packaged foods, and supplements.
Sure, it is fun to buy those things every now and then, but it is not realistic for many. I have learned quickly that it is so simple to put together a nutritious breakfast. Many of the breakfast foods we love have no animal products in them. Hashbrowns, toast and fruit, oatmeal, bagels, and sauteed vegetables. You can make a proper huge breakfast without bacon and eggs!
Sometimes, you don’t want to put in much effort, but still want to make sure you’re fueling your body adequately for the day. Here is one of my favorite, cheap 3-minute breakfasts: a plain bagel with peanut butter and mini chocolate chips.
Did you know that most store-bought bagels are vegan? With the exception of some gluten-free bagels and of course flavored bagels that feature different cheeses, they are not terribly difficult to find. And who doesn’t love peanut butter and chocolate? I used these mini semi-sweet chocolate chips – it doesn’t take more than a few sprinkled on top to have a big impact on the flavor.
Grab a cup of coffee and some fresh fruit, and it’s a perfect and quick meal!
